Arugula, Fig & Blue Cheese Salad

I had no idea figs tasted this good! They are sweet with a bit of an earthy flavor which tasted simply perfect over a cool crisp salad. The dressing is a basic balsamic dressing with a touch of Dijon and paired really well with the blue cheese and figs. Feel free to throw some chopped walnuts over top or add other fruits such as fresh raspberries
