Mouth-Watering Crème Brulee Cheesecake

This crème brulee cheesecake not only looks beautiful, but it is definitely easy to make and very delicious too! What to Prepare • 200g packet of shredded wheat biscuits, • 80g of melted reduced-fat spread • 250g softened light cream cheese • ¼ cup of caster sugar • 1 tspn of finely grated orange rind • ½ tspn of vanilla extract • 2 eggs • ½ cup of skimmed sweetened condensed milk • 1 tbsp demerara sugar • strawberries Procedure 1. Preheat the oven to 170°C/150°C then coat with oil a 3cm-deep, 22cm (base) round fluted loose-base flan tin. 2. Ground the biscuits until the mixture looks like fine breadcrumbs then mix in the melted spread. Mix until the ingredients are just combined. Place the mixture evenly into the prepared flan tin then press it. After, place the flan tin in the refrigerator to cool for 20 minutes. After cooling, bake this on the oven for about 10 minutes then take it from the oven and set aside to cool. You now have your base. 3. Mix well the cream cheese, sugar, orange rind, vanilla, eggs and milk until the mixture becomes smooth. Pour this mixture over the prepared base and bake this for about 20 minutes or until just set. Remove from the oven then set aside to cool to room temperature. Cover this and place in the chill in the refrigerator for about 3 hours. 4. Prepare the grill tray by placing it as close to the grill as possible. Put the grill to medium-high. Take the cheesecake from the refrigerator and cover the edge of the biscuit base (i.e. around the rim of the pan) with tin foil to prevent it from burning when you grill it; sprinkle some sugar on top of it then grill this for about 4 to 5 minutes or until the sugar caramelizes. Take the cheesecake and set this aside to allow the toffee to set. This could take about 5 minutes. 5. You can now serve you crème brulee cheesecake with strawberries as toppings.
