This looked good and anything to make veggies more appealing to me! But I don't want to roast and crush cumin! Can there be a sub? Thanks! Penny

When a recipe calls for cumin, and you don't have any on hand, use one of these three substitutes in its place: ground coriander carraway seeds chili powder

Penny, the cumin adds a slight bitter, sweet, smokiness to the dish. If you don't want to roast it and grind it, ground cumin is readily available at your local grocer. If you cannot find cumin, simply omit it. The recipe already has powdered, dried chile and coriander (cilantro).
